It's Friday. Thank GOD. Seriously. I didn't know if I was gonna pull threw this week-- it's been non-stop insomnia (that sounds funny). Kasia ripped her toe nail off on Sunday night and since that evening, she comes into our room in the middle of the night panting (which = "Mommy, my toe hurts. I need you to snuggle me." = awesome = Jennie gets zero sleep). Not to mention, Junior Willis loves to do P90X from 2 - 4 AM CST. WTF. Night time is for sleeping, not Crossfit in utero.
On a brighter note, Carrie is coming up this weekend to do some Mother's Day flower planting. As mentioned in previous posts, I'm looking forward to raising the flower bar this summer. I want to have the best house on the block..... and show all those red lava rock people that dark mulch DOES look way better. Additionally, dinner is planned tonight with a SJC alum.... Miss Kristin Gandurski Stiltner. Our meal ought to be very interesting as we cover many topics and catch up on Puma Gossip.
The office on Fridays is typically a ghost town. The cool wolf pack usually goes out to lunch however, today we chose to do a "potluck" if you will. I tried my hand at pastor (recipe below) but it really just ended up being flavorful pulled pork.
1 - 5lb. pork butt (including bones)
4 - whole cloves of peeled garlic
1 - whole jalapeno
1 - 20 oz. can of crushed pineapple w/the juice
1 - bunch of cilantro
Cook on LOW 8-12 hours in crock pot. Serve warm with corn tortillas, raw onion, cilantro, or whatever toppings you like. I recommend this for a larger group dinner (8 people). This recipe can also be modified with Hawaiian flare, omitting the cilantro and jalapeno, adding ginger and some soy sauce. Serve with white rice and plate lunch style macaroni salad (Maui style).
The exhaustion just hit me. I wish I could curl up under my desk and snooze.
