Happy Singles Awareness Day!  Hope your day (thus far) has been filled with all things love related; puppies, flowers, hearts, chocolate, Target sweatpants and Air Supply.  Today also happens to be Ash Wednesday, which I was reminded of by my 5 year old.  "Mom.  Jesus died on the cross.  Then we went to church.  I closed my eyes."  Well said Beau, well said.

I'm not really a Valentines Day kinda gal, but I am a mild participant of Lent.  I think it's a nice idea to sacrifice a little/give back a little more at least once per year.  My maternal grandmother always gave up beer and sweets for Lent (Keystone Light, Caramel Creams and All Sort licorice chews).  I usually try and not to swear/be a little nicer when I really don't want to be, but it only lasts about one day.  Here is to giving it one more try!

All Things Winter

It's the beginning of February.  Not gonna lie..... I'm loving winter this year.  Last year at this time, we had only one big snow (more than 1-2 inches) and it was fairly mild (above 30 degrees).  In fact, Chris and I didn't get to ride our snowmobiles; the trails in Wisconsin did not open ONCE.

Luckily, last night we were covered with a lovely blanket of fresh snow.  Beau and I slapped on our snowpants and played outside til our faces were frozen.  He, like me, loves the snow.  While outside I was trying to get together a dinner game plan (something I struggle with on the daily).  Then Beau, like the words from a magic unicorn, says, "Mommy-ah.  I want chicken noodle soup for dinner."  Perfect.  So below is my recipe for chicken noodle soup that will warm your bones on a cold winter night.

You can go ahead and cut some corners on this recipe (i.e. buying an already roasted chicken), but honestly doing everything from start to finish isn't that hard...... it's just a bit time-consuming.

Ingredients
Whole chicken
2 small onions
4 cloves of garlic
4 carrots
3 celery stalks
Olive oil
12 c low-sodium chicken broth [3 32-oz containers]
1 24-oz bag of Reames Egg Noodles

Directions
To make roasted chicken at home: Buy a roaster chicken-- any size.  Bring to room temperature, take out insides, rinse, and pat dry.  Whip out your Crockpot (everyone has one).  Make 4-5 baseball-sized foil balls and put them at the bottom of the Crockpot.  *This is a great tip when doing a big roaster bird*  Stuff the chicken with half of an onion, 4 whole cloves of garlic, half of a carrot and half of a celery stalk.  If you can fit more/less in the cavity, go for it.  Place stuffed chicken on top of the foil balls so it's not touching the bottom, set on High, and cook for 4 hours.

Once chicken is done, pull out in the best way possible while keeping the bird whole.  Let rest and cool.  Once you're able to handle it comfortably, pull all the luscious meat off the bones.  Discard what remains of the carcass or save for broth.

To make this delicious soup:

Get out your largest stock pot, turn stove to a medium heat, and let's start prepping.  I take 3 carrots (because I love them) and do a fairly large chop, 2 stalks of celery with the leaves (amaze flavor, similar to Italian parsley) chopped small, and a small diced onion, and add to the stockpot with about two tablespoons of olive oil.  Let the veggies get happy and hang out until they are smelling up the kitchen.  Add 12 cups of low-sodium chicken stock (I love Target's Market Pantry brand).  I know it sounds like a lot but once it's all said and done, there is plenty to freeze or share with neighbors.

Bring stock to a boil and add one whole 24-ounce bag of Reames Egg Noodles (in the frozen section of the grocery store).  Let the noodles and liquid come back up to a boil then lower the heat to a simmer.  About 25 minutes should be the perfect cooking time.  Once done cooking, add as much chicken as you prefer.  Voila.  Serve in oversized bowls for maximum awesomeness.

Pro-tips: My mother and both grandmothers taught me a great trick with any soup-- once it's cooked, freeze the soup.... or as I did last night, put it on the back deck or porch.  Reheat for even better-tasting soup.  Another tip is to not add too much salt (hence the low-sodium stock).  There is nothing worse than having SALTY soup.  Plus, if you are entertaining guests, not everyone likes salt, and some would probably prefer to add their own salt and pepper.

I just had a bowl of second-day soup and it was awesome.  Not to mention, I shoveled our driveway, plus the neighbor's, and I needed some thawing.

DIY....... more like a giant steady headache

There are a wealth of fantastic DIY shows on TV now.  My favorite show is Home Town with Ben and Erin Napier.  Filmed in their hometown of Laurel, Mississippi, the soft-spoken couple flips adorable cottage homes into gorgeous Southern gems.  I'd also like to point out that each of the homes Ben and Erin flip have really catchy character to them-- not boring cookie cutter tract homes.



That being said, DIY shows tend to glaze over the very hard work that goes into flipping properties.  For someone who doesn't own a home (or doesn't participate in any sort of rehab whatsoever), there is a delusional aspect that is conveyed with said DIY shows, giving the viewer a false sense of how flipping really is. Flipping is hard, painstaking, slow, unpredictable, and at times freakin' frustrating as hell.  Pardon my language.

Our first flip was a year-long project that basically began as a raccoon habitat.  Here we are in flip #3 and at somewhat of a crossroads.  We bought our current home very cheap-- too cheap to pass up.  Chris has done an amazing job renovating everything except the master bath and kitchen ($$$$).  Do we complete the work and move on, or stay and enjoy the fruits of our labor?

I guess we are back here again....... "here" being the freaking 1800s, when it was more acceptable to shame women based on their appearance.  On MSN this morning, Fox News' Janice Dean received some social media backlash regarding her choice of wardrobe and how her choice(s) in clothing should include hiding her legs.  Ms. Dean fired back with a quick thank-you and added that if the author didn't like her legs then she ought to change the channel.  What America doesn't know is that Janice has been suffering from MS for the past 10 years; a battle that could cripple her at any time.  I'm glad that Janice Dean has legs strong enough to walk, workout, or do whatever she wants.

Every single person has had moments of insecurity regarding a body part.  Whether it be a crooked tooth, receding hairline, cellulite, or even one earlobe bigger than the other, no human is excluded from feeling self-conscious.  In high school I very much remember feeling like a whale compared to the other girls in my class.  I have never been (nor ever will be) a size 0.  I had boobs and a juicy booty in 6th grade.  I can say, however, that I was a great athlete in my school days, and have completed several running races as an adult.  Moreover, God has given me two legs and two arms and fingers and toes and a healthy set of organs.  It's hard to focus on what we have when we are being picked apart for what we don't have.

My daughter has the same body type as me, curvy and muscular.  God help me if some girl teases her and calls her "thunder thighs".  I constantly tell my children how strong they are, and how God gave everyone muscles to give good hugs and high fives and to run on the playground.

Oprah Winfrey.  Blowin' the lid off.  Not to mention, lookin' fly in the process.  Way to go girl.

Things I'm loving:

Hoka One One running shoes (www.hokaoneone.com).  Where have they been all my life?  Finally, a running shoe with ample cushion, appropriate width AND comfort for those annoyingly painful cement jogs.  I am by no means a runner that logs in 50+ miles a week however, due to my athletic build, comfort goes a long way with me and my legs.  Yes Hokas cost a bit but it is SO worth it.  Trust.

Marula Pure Marula Facial Oil (www.marula.com).  I'm digging deeper into taking care of my skin (since its the only skin I will ever have) and received a sample of this luxurious awesomeness in December's Birchbox (wait for it.....)  Knowing nothing about facial oils, I researched Marula oil and the possibility of it making me break out even more (thank you hormonal acne you asshole).  Apparently, marula oil is legit for all skin types and hydrates quite nicely.  A few drops of this lovely scented liquid underneath my daily moisturizer is awesome.  High five.

Fitness Blender (www.fitnessblender.com).  One of my (many) 2018 resolutions is to get back into shape.  I want to return to the strong person I once was; able to do push-ups and lunge after lunge.  Fitness Blender is this wicked cool channel on YouTube that is FREE.  Yep.  FREE.  There are a million different types of workouts to choose from so you'll never get bored.  Simple to follow and straight to the point, Fitness Blender allows you to pause whenever, work out in the privacy of your own home, and not have to pay for a gym membership.  Score.  Miss Hawaiian Tropic here I come.

Things I'm NOT loving:

Ipsy (www.ipsy.com).  All those monthly subscriptions that lock you in for $10/month seem harmless, right?  Wrong.  For $10, and a fairly lengthy profile subscribers have to fill out, I would think it would not be hard to receive samples that fit your needs.  Wrong.  After several months, I received MAYBE one product that fit my profile.  No, I am not interested in trying a matte dark brown lipstick.  1000% retinol night cream for my extremely sensitive and dry skin, no thanks.  Try again Ipsy.  I'd rather switch to Birchbox, drive to Sephora and get a bag of free samples that are good.

Caillou.  Yep.  That little bald bastard on Sprout TV.  What a dick.  That whiney, high-pitched voice could drive the sanest person off the edge.  Bye Felicia.

I'm baaaaack

I'm back and so are the Chicago Cubs.  Several months of a much needed hiatus, brain breaks and a summer sabbatical is just what the doctor ordered for some fresh perspective. 

My last post was in March.  Too much has transpired to cover it all (in terms of social injustices, etc) so I'll just touch on the important stuff in the happenings of the world.

-I'm 100% over Kardashians.  OVER IT.  I even took "Keeping Up With The Kardashians" off the DVR.  Yep.  Don't care.

-Though I love playoff baseball, I'm chompin' at the bit to get into Red Wings hockey.

-This business with Harvey Weinstein exposing himself, jerking off in front of people, trying to go to first or second base with innocent women is beyond me.  BEE-YOND.  Homeboy needs a hard kick in the dick and to go away for a long time.  LONG time.  Like, a Mesozoic period of length.  No one gives a flying f if you make Oscar-worthy films; there are plenty of other, more talented, less likely to rape women producers to come up with good content.  So go fuck yourself HW.

-The documentary Resurface (found on Netflix) is a must see.  Shedding light on veterans and their struggles to overcome, Resurface brings those afflicted to the ocean as a sanctuary to heal.  Tear-jerking, poignant, eye-opening and overall uplifting, Resurface reminds its viewers that basic things in life can help heal.  Surfing, community and focusing on positives is pivotal in the message.

Things I'm loving lately......  and things I'm hating.

Ninja blender.  You can throw anything in this and it will pulverize into a lovely smoothie of healthy deliciousness.  I need one stop shop kitchen appliances -- I don't know how to operate my food processor, even after watching 5 YouTube videos on "How To Operate A Food Processor."  The simplicity of the ninja rocks my world.

Clairol Shimmer Lights Shampoo.  Nothing is more unappealing than brassy blonde hair.  If you pay to get your hair colored and roll out with yellow hair, homegirl didn't do her job.  Tone that shit.  For those that don't know what toning is-- its essentially a temporary hair stain in a bluish/purple color to neutralize orange/brassy tones.  Mentioned shampoo is a purple bottle of awesomeness that washes away yucky trashy colored highlights.  I use the magic potion 2-3 times a week and it keep things on flizz.


The Poetry Leap.  If you are looking for personalized poetry for a birthday gift, the arrival of a new baby, anniversary or simply to commemorate a special friend with special words, the Poetry Leap is perfect.  Long gone are the days of trying to find the perfect gift at Target.  Heartfelt and thoughtful words, to me, make for the BEST gift.


THINGS I'M HATIN' RIGHT ABOUT NOW.....  

Donald Trump.  Errr, I mean President Trump (as I throw up in my mouth).  What a dick.  He acts like that douchey college guy on your dorm floor that couldn't ever get ass, so he would just throw himself on harmless women instead, leaving them traumatized forever.  Trump probably wears Joop cologne.

Winters without snow.  The Midwest has doggone lost its mind.  All this bipolar weather is making me rethink where we live.  In our garage sits two beautiful WELL RESTED Yamaha snowmobiles.  THANKS Midwest winter for blowing it year after year.  If the thermometer outside reads anything less than 40..... best see some snow on the ground.  All this 36 Fahrenheit and dreary and gray and eat-carbs-all-day-long is over played and I'm done with it.

Clinique Happy.  What was once my top five favorite perfumes now smells like stripper spray.  I don't know if its my overall change in awesomeness but I need a new fragrance.  Suggestions?

I'd like to approach a channel (such as TLC) and pitch the idea of parents switching places for a week.  Not Wife Swap.  Not Celebrity Wife Swap.  Not Super Nanny.  I'm talkin' Freaky Friday type stuff.  Example:  Chris stays home with kids for 5 days whilst I go to his jobsites.  Now, keep in mind I have no clue how to remodel a kitchen, so some job modifications on his end would have to happen.  On my end however, nothing would be changed; business as usual. 

To compile accurate data, cameras would be set up throughout our home, GoPros strapped to our chests and interviews would be conducted.  Perhaps then, and only then, could we do an analysis on what our days consist REALLY of.  To be honest, and I'm making a generalization, parents that work outside of the home full-time and have never been home with children do not understand fully what it is like.  (And on the flipside, I don't really know what Chris' day is like.)

Thoughts?  Am I way off on this one?

Delicacies and Rap

I discovered a new amazeballs show.  Literally, I should get royalties for finding it because its that awesome.  "That's F*cking Delicious" on the Viceland Network may be, hands down, the most well-rounded program in all the land.  Hitting all high points of a solid show, TFD tackles food, music, lifestyle and culture all wrapped up like a mouth watering piece of braciole. 

Hosted by rapper Action Bronson, this salt-of-the-earth approach to tv entices all the senses.  Additionally, Action's "crew" is more entertaining than the raps they spin (too much?).  You may also grab a little weed education on the side.  I'm not going to divulge anymore because then it wouldn't be a secret.  Bon appetit.

In the throws of January, the gloom and rain is about to get even gloomier as we embark on a Republican presidency.  I'm very nervous about what lay ahead.  I'm not talking about wedding day nerves/excitement...... I'm talking about-to-get-expelled-from-school type nerves.  Shit your pants nerves.

In brighter pastures, the Willis house has reached new heights.  Casey is potty-trained (for those that care) and our basement is almost finished.  We have now graduated from diapers to having little potties dotted around our house, as well as a new set of rooms in our house that the kids can trash.  Good times.  In our basement renovation, we included a panic room for the kids; a place where all their toys can go, balls/swords can get thrown at the walls and markers can leak without me or Chris freaking out.

Speaking of renovations, I've revamped my typical new year resolutions to actual attainable goals.  2017 will be spent doing more strength training and stretching.  I also think dairy and my diet need to have a come-to-Jesus discussion, and by discussion I mean break up.  Lastly, my blog will not be put on the back burner.  (stay tuned for a blog facelift)

How is it that all this time has passed and it didn't even dawn on me to blog?  To my fan base: I am sorry.  I'm officially employed as a stay at home mom (again).  I am doing billing and bookkeeping for my father's business in the evenings, which works out perfectly for momming during the day. 

Summer is now workin' through August..... fall will be here before we know it.  Though I love hot days and swimming in the lake, we all know this girl lervs some sweater weather.  And no, I don't do pumpkin spice lattes (hot coffee cream only thanks).

Beau is officially 4 today.  Sounds cliché but I literally don't know where the time has gone.  Shep was just born.  I remember that whole day like it was yesterday, minus the C-section part......  40 weeks and 4 days to prepare for what would be my biggest blessing.  (cue tears)  Beau has grown into the sweetest little boy; never a day goes by without him walking up to me and telling me how much he loves me and that my ears are soft.  Beau loves cars, trucks, boats, planes = anything that moves.  He is absolutely FASCINATED by how things work and asks lots of questions.  I am making a prediction that Beau will either be an engineer of some sort or perhaps a carpenter like his dad.
